This premium quality food emulsifier presents itself as a yellow viscous liquid. While it is insoluble in cold water and ethanol, it effortlessly dissolves in hot grease. As a nonionic water-oil emulsifier (W / O), it ensures seamless blending and consistency.

1. When used in chocolate, even a minimal addition can remarkably enhance the fluidity of chocolate products while reducing the necessity for cocoa butter.
2. It accelerates the filling and mold forming processes for chocolate, optimizing production by facilitating easy release of small bubbles. This helps to prevent the formation of voids and pores, ensuring a flawless finish.
3. In combination with lecithin, it exhibits a powerful synergistic effect, reducing the thickness of chocolate coatings, thus easing the processing and application.
4. Under humid conditions, it effectively lowers viscosity and promptly forms a chocolate sugar coat. It speeds up conglutination and enhances adhesion, all while minimizing small pore formation.

Usage

For optimal results, the recommended maximum usage in cocoa products, chocolate, and its derivatives, as well as in candies, chocolate-coated items, and ice cream coatings, is 5.0g/kg. For oily-water fat emulsified products, an upper limit of 10g/kg is suggested.
