Product Description

It is a non-ionic surfactant, chemical name polyoxyethylene dehydrated sorbitan fatty acid ester, referred to as Polysorbate. They are composed of esters formed by sorbitol and different higher fatty acids, so TWEEN is actually a series of products of the same type, including TWEEN 20(Tween-20), TWEEN 40(Tween-40), TWEEN 60(Tween-60), TWEEN 80(Tween-80).

Tween emulsifier has superior emulsification, diffusion, solubilization and stability, and is easily soluble in water, methanol, ethanol, isopropyl alcohol and other solvents, but insoluble in mobile and mineral oil. Their appearance is yellowish to amber oily liquid or paste.

Applications

1. Emulsifier for ice cream, bread, pastries, confectionery, etc. : TWEEN 80 is used as an emulsifier, dispersant and turbidity agent in the amount of 0.1% to 0.5% to prevent creamy food from spattering, food aging, and improve quality, shine, taste and softness.

2. Improve taste and appearance: TWEEN 80 can improve the taste and appearance of foods, especially in ice cream, where it is able to improve the taste and prevent the formation of ice crystals.

3. Prevent food aging: Adding TWEEN 80 to food can delay the aging process of food and maintain the freshness and flavor of food.

4. Synergies with other emulsifiers: TWEEN 80 can be used alone or together with food emulsifiers such as glycerol ester and sucrose ester for greater effect.
