3. When utilized in bread making, it reacts dynamically with glutenin in flour, significantly improving dough aeration during fermentation, resulting in larger, more pliable bread with enhanced texture.

Usage

Recommended maximum dosage: For protein, plant, and lactic acid beverages, use 2.0g/kg. For solid drinks, apply up to 3g/kg. In bread dough regulators, use 5.0g/kg and for oils and emulsified fats, apply up to 10.0g/kg.
